Whether you consider yourself a breakfast person or not, summertime is arguably the best time of year to be experimenting with new recipes! All of the fresh fruit and vegetables not only makes the meal delicious, but also lets our bodies feel satisfied and energized. Here are some recipes that can get you motivated to wake up in the morning:
- Overnight Oats with Berries

Overnight oats are a year-round favorite, but there are plenty of ways to make it special for summertime. Mix rolled oats with milk or water, add desired fruit – like bananas, strawberries, raspberries, or blueberries – and top with peanut butter, dark chocolate, chia seeds, honey, almonds, and anything else you enjoy!
- Yogurt Bowls

Refreshing and light, yogurt bowls are perfect for warm summer mornings! Begin with a yogurt base (Siggi’s, Chobani, and Stonyfield are all great options), and load with berries, nuts, and nut butters. The cherry on top is granola – a fan favorite amongst many is Purely Elizabeth. Purely Elizabeth has plenty of flavors like Cookie, Chocolate Peanut Butter, Berry Crisp, and Original.
- Smoked Salmon Toast

For any savory breakfast lovers – this one’s for you! Use whichever bread you prefer to toast (english muffins can be great), spread cream cheese, and top with smoked salmon and capers!
- Omelette with fresh vegetables

While farmers markets are selling fresh produce, there is no better time to make nutritious omelettes. Pack with tomatoes, asparagus, zucchini, avocados, spinach, and anything else you like. Don’t forget the cheese: cheddar, mozzarella, goat cheese, and feta are all (egg-)cellent choices.

A great option for those who may want something lighter but substantial in the mornings. Pack the smoothie with your choosing of fruit and/or greens, protein powders, and nut butters! Form it into a smoothie bowl with toppings for a scrumptious treat.
- Cottage Cheese

Although it can be a controversial food choice, cottage cheese can be used very creatively for breakfast lovers! For those who might struggle to eat it plain, ease yourself into it by putting it on top of avocado toast, or scramble it with some eggs and pair with toast on the side. You can also pour it with fruit like pineapple or raspberries and drizzled honey.
- Blueberry Pancakes

A timeless summer classic. While homemade pancake batter is great, buying a box of Bisquick can save some time. If you happen to live near any berry farms where you can pick your own blueberries, these pancakes will taste even sweeter! Make sure to coat them in maple syrup, butter, or even a blueberry syrup that you can make with blueberries, water, and sugar!
- Lemon Poppyseed Muffins

If you love sweet and zesty together, you have to incorporate these in your breakfast rotation. Lemon poppyseed muffins are delectable with a variety of recipe options for everybody. If you want a healthier / more protein-packed version, you can substitute the butter and oils for greek yogurt or cottage cheese!
